What's the reason you didn't use an existing slicing machine, like the ones used for slicing ham at the butcher? Reducing the number of custom made machines will greatly increase robustness later on all around (reliability, supply chain robustness, spare parts, skilled repair people...).

Good idea chfritz, I agree with the positives of off the shelf components. However a ham slicer is quite large and loud( I can not directly control the motor speed). And the biggest drawback is that they slice vertically and that makes it hard to place the tomato on the bun.
