I expect, or at least hope, that this exactly what will happen... eventually. But, I've been expecting that since I decided I wanted nothing to do with Facebook about two decades ago, and it's still not here (though Mastadon is nice). As the quote from Keynes goes, "Markets can remain irrational longer than you can remain solvent."

Yeah very true... I'm pretty curious what the reasons for this are. Maybe it's just that people are afraid of the lawyers from all these big tech companies, and that's why they don't want to reverse-engineer all these platforms to be able to properly import all data from them?

In my experience it's more that even very small technical hurdles with something like Mastodon or Plex are too much for some users.
To expand on that - independent software or services usually require users to exercise a little more know-how and agency than Facebook or Twitter which "just work". That prevents user adoption, and said patteren of lack of adoption has a chilling effect on potential software development within that space.
